Carrot Cake Balls

They may not look pretty but they sure are tasty! The spices and sweetness from the dates and raisins make this carrot cake infused snack a big winner in my book!

Ingredients

  • 1 cup walnuts

  • 1/2 cup pitted dates

  • 1/2 cup raisins

  • 2 cups shredded carrots

  • 1 cup rolled oats

  • 1/4 cup coconut or almond flour

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon allspice

  • 1/4 teaspoon salt

Preparation

Place the walnuts, dates, and raisins in the food processor and process until everything is well broken down.



Add the rest of the ingredients and pulse until it is combined.



Roll the mixture into 1 inch balls. Enjoy!
