Chocolate Chip Zucchini Brownies

This brownie recipe from Elavegan (linked below) is a quick one to throw together when you are craving something sweet.

Ingredients

Dry Ingredients:



  • ¾ cup of coconut palm sugar

  • 1 ½ cups of oat flour

  • ½ cup of vegan chocolate chips

  • ½ cup + 1 tablespoon of unsweetened cocoa powder

  • 1 teaspoon of baking powder

  • ¼ teaspoon of baking soda

  • ⅓ teaspoon of salt

  • 1 teaspoon of instant coffee (optional)



Wet Ingredients:



  • 1 ¼ cups of shredded zucchini (tightly packed)

  • ½ cup of nut butter (I used peanut butter)

  • ¼ cup of plant milk

  • 1 teaspoon of pure vanilla extract

Preparation

Line an 8x8 pan with parchment paper. Preheat the oven to 360 degrees. Add all the dry ingredients (minus the chocolate chips) into a food process and process until well combined. Add all the wet ingredients and blend again until smooth. Finally, add chocolate chips and stir with a spoon. Pour into the prepared pan and sprinkle a few more chocolate chips on top. Bake for about 35 to 40 minutes in the oven. For fudgy brownies, cook for 35 minutes and 40 for cakey brownies.
