Pumpkin Pie Chia Pudding

I love pumpkin pie but when I make it from scratch, it takes forever. Pumpkin Pie Chia Pudding is a very simple way to enjoy the same flavors. Just allow enough time to chill.


  • 2 tablespoons of chia seeds

  • ¼ cup of canned pure pumpkin

  • 1/2 cup of plant milk

  • 1 tablespoon of agave or pure maple syrup

  • ½ teaspoon of pumpkin pie seasoning

  • ½ teaspoon of pure vanilla extract


Add plant milk, pumpkin, sweetener, pumpkin pie seasoning and vanilla to a jar and mix well with a fork or whisk. Add chia seeds and mix well again. Let settle for about 2 minutes then mix again very well until no clumps remain. Add a lid to the jar and store in the fridge for at least 2 hours (can leave overnight).
