Strawberry Banana Cookies

This recipe is a fun way to incorporate freeze dried fruit into a sweet treat. If you prefer a different freeze dried fruit substitute feel free to sub out the strawberries. These cookies are definitely a fan favorite with the kiddos!

Ingredients

  • 2 ripe bananas

  • 1 flax egg (1 tablespoon of ground flax + 3 tablespoons of water whisked together in a small bowl and set aside for 5 minutes)

  • 1/4 cup of plant milk

  • ¼ cup of agave or pure maple syrup

  • ½ teaspoon of pure vanilla extract

  • 2 cups of quick oats

  • ½ cup of whole wheat flour

  • ½ teaspoon of baking powder

  • 1 cup of freeze dried strawberries

  • ¼ teaspoon of cinnamon

  • ¼ teaspoon of salt

Preparation

Preheat oven to 350 degrees. Mix all ingredients together in a large bowl minus the freeze dried strawberries. Fold in the freeze dried strawberries last. Form into 10-12 about 1 inch balls and flatten into cookie shape. Place on a cookie sheet. Bake for 15 minutes.
