5 Ingredient Avocado Lemon Pasta

A super simple and great way to use up leftover cooked pasta in your fridge.


  • 2 cups cooked whole grain pasta (chilled)

  • 1 ripe avocado

  • ½ cup corn (canned that has been drained or frozen that has been thawed)

  • Squeeze of lemon

  • ¼-½ teaspoon of salt


Cut and remove pit of avocado. Add to a bowl and mash really well. Add cooked pasta, corn, squeeze of lemon and ¼ teaspoon of salt. Mix together. Taste and adjust salt if needed. Enjoy!
