A super simple and great way to use up leftover cooked pasta in your fridge.
2 cups cooked whole grain pasta (chilled)
1 ripe avocado
½ cup corn (canned that has been drained or frozen that has been thawed)
Squeeze of lemon
¼-½ teaspoon of salt
Cut and remove pit of avocado. Add to a bowl and mash really well. Add cooked pasta, corn, squeeze of lemon and ¼ teaspoon of salt. Mix together. Taste and adjust salt if needed. Enjoy!
