Green Goddess Salad

I used to only put ranch on my salads. I love a good vegan ranch but this avocado tahini dressing is a great way to shake things up plus it’s full of plenty of nourishing ingredients. If you prefer other greens and veggies, feel free to add whatever veggies you prefer to make this salad cater to your preferences.



  • 8 cups of fresh spinach

  • 1 bunch of asparagus

  • 8-10 mini sweet peppers

  • 1 large cucumber

  • 1 cup of shredded carrots

  • 4 tablespoons of sunflower seeds

  • Sprinkle of salt, garlic powder, and pepper

Avocado Tahini Dressing:

  • 1 large avocado

  • ½ cup of water

  • ¼ cup of tahini

  • ½ teaspoon of salt

  • Squeeze of lemon

  • 1 tablespoon of fresh cilantro

  • 1-2 small cloves of grated garlic


Trim woody ends off of asparagus. Bring a large pot of water to a boil. Boil asparagus for 7-8 minutes. Drain then sprinkle with salt, garlic powder, and pepper. Chop veggies. Add all the dressing ingredients to a blender and blend until smooth. Thinly slice peppers and cucumber. Layer 2 cups of spinach, ¼ of the sweet peppers, ¼ of the cucumber, ¼ cup of shredded carrots, asparagus, and 1 tablespoon of sunflower seeds into a large bowl. Top with Avocado Tahini Dressing and enjoy!
