I wanted a simple lunch this week so I came up with this quickie. Nothing crazy here but still tasty and of course full of healthy ingredients to fuel your body. I tried Tajin seasoning for the first time recently and love the punch of lime which inspired this dish.
Ingredients
1 cup of quinoa
2 cups of water
½ teaspoon of sea salt
¼ teaspoon of garlic powder
1 can or 2 cups of cooked chickpeas
1-2 limes
½ teaspoon of smoked paprika
1 teaspoon of Tajin
Salt to taste
4 small avocados

Preparation
Set the oven to 400 degrees. Drain and rinse chickpeas then lightly pat them dry. Add to a baking sheet. Squeeze lime juice on top and toss. Sprinkle with smoked paprika, Tajin, and a pinch of salt and toss again. Bake for 20 minutes.
Rinse quinoa and set aside. Bring 2 cups of water to a simmer. Once simmering, add quinoa, mix well, reduce heat to low and cover with a lid. Let cook for 15 minutes. Once done cooking, add sea salt and garlic powder and fluff with a fork.
Serve quinoa and chickpeas with avocado, a generous squeeze of lime juice and a sprinkle of Tajin.
