
I used to be a ranch only girl. I put ranch dressing on everything! Nowadays I like to think my tastebuds are a lot more sophisticated. This dressing is definitely the star of this recipe. So much flavor!
Ingredients
1 cup of quinoa
2 cups of water or veggie broth
Pinch of salt
8 cups of spinach
¼ red onion, diced
1 cucumber, diced
1 can or 2 cups of cooked chickpeas
2 small avocados
1 tomato
Golden Turmeric Dressing:
1/2 cup of hemp seeds
1/3 cup of water
1/2 of one whole lemon (seeds removed), or 1 tablespoon of lemon juice
2 teaspoons of agave
1 garlic clove
1/4 teaspoon of turmeric powder
1/8 teaspoon of onion powder
1/4 teaspoon of salt

Preparation
Add rinsed quinoa, sprinkle of salt and veggie broth to a pot and bring to a light boil. Reduce to a simmer, cover, and cook for about 15 minutes or until liquid is absorbed. Wash and cut veggies. Drain and rinse chickpeas. For the dressing, add all ingredients to a high speed blender and blend until smooth and creamy. Add 2 cups of spinach to each bowl, topped with red onion, cucumber, chickpeas, avocado, quinoa, tomato and dressing.
