Veggie Noodle Jar with Peanut Sauce

Jar lunches like this one are great because they are easy to prep ahead and take less than 2 minutes to prepare when ready to eat. Just empty into a large bowl, mix, and enjoy!

Ingredients

Ingredients:



  • 10 oz Udon noodles or Asian noodles of choice (I used Lotus Foods Organic Brown Udon Rice Noodles)

  • About 4 cups of sugar snap peas

  • 2 cups of shredded carrots

  • 1 red bell pepper

  • 2 cups of frozen shelled edamame (thawed in microwave)

  • Cilantro



Peanut Sauce:



  • ½ cup of natural peanut butter

  • ½ cup of warm water

  • ¼ cup of of soy sauce

  • 4 teaspoons of rice vinegar

  • 2 small cloves of garlic (grated)

  • 1 teaspoon of agave

  • Pinch of red pepper flakes

Preparation

Cook noodles according to directions. Roughly chop sugar snap peas into pieces. Dice red bell pepper. Add peanut sauce ingredients into a blender or food processor or mix well in a bowl. Layer peanut sauce, then noodles, and remaining veggies into jars. When ready to eat, empty the contents into a large bowl, mix, and enjoy!
