Jar lunches like this one are great because they are easy to prep ahead and take less than 2 minutes to prepare when ready to eat. Just empty into a large bowl, mix, and enjoy!

10 oz Udon noodles or Asian noodles of choice (I used Lotus Foods Organic Brown Udon Rice Noodles)
About 4 cups of sugar snap peas
2 cups of shredded carrots
1 red bell pepper
2 cups of frozen shelled edamame (thawed in microwave)
Cilantro
Peanut Sauce:
½ cup of natural peanut butter
½ cup of warm water
¼ cup of of soy sauce
4 teaspoons of rice vinegar
2 small cloves of garlic (grated)
1 teaspoon of agave
Pinch of red pepper flakes
Preparation
Cook noodles according to directions. Roughly chop sugar snap peas into pieces. Dice red bell pepper. Add peanut sauce ingredients into a blender or food processor or mix well in a bowl. Layer peanut sauce, then noodles, and remaining veggies into jars. When ready to eat, empty the contents into a large bowl, mix, and enjoy!
