Usually I just throw summer squash into stir fry mixes and rarely experiment much with adding them to new recipes. This air fryer recipe is a fun way to add squash to your diet and treat your tastebuds.
Ingredients
2 medium summer squash
1 tablespoon of liquid aminos
1 teaspoon of garlic powder
1 tablespoon of nutritional yeast
½ teaspoon of basil
½ teaspoon of oregano
¼ teaspoon salt
Pepper to taste
Preparation
Preheat the air fryer to 400 degrees. Wash and slice squash into ¼ to ½ inch rounds. Place squash in a bowl and coat with liquid aminos. Add nutritional yeast, garlic powder, basil, oregano, salt and pepper to a bowl and mix well. Add seasoning (saving a little to sprinkle more on later), toss and coat well. Add squash to the air fryer into a single layer (may have to cook in 2 batches). Cook for 12-15 minutes (flipping and sprinkling with more seasoning midway through) or until lightly browned but still firm. Sprinkle with a little more seasoning and enjoy.
