Fiesta Pasta Salad

This chilled pasta dish comes together quickly and tastes great. A lot of pasta salad variations include olive oil but this one is made sans oil. Due to the avocados, I recommend serving the same day you make it to prevent browning.

Ingredients

  • 1 box of whole grain pasta or pasta of choice

  • 2 tomatoes

  • 1 red bell pepper

  • 1 cup chopped red onions

  • ¼ cup of chopped of cilantro

  • 1 large lime

  • 3 ripe avocados

  • 1 can of black beans or 2 cups of cooked black beans (drained and rinsed)

  • 1 teaspoon of sea salt

  • 1 teaspoon of cumin

  • ½ teaspoon of garlic powder

  • ½ teaspoon of smoked paprika

  • ½ teaspoon of onion powder

Preparation

Bring a large pot of water to a boil. While waiting on the water to begin boiling, chop tomatoes, bell pepper, red onions, and cilantro and add to a large bowl. Cut avocado into cubes (slightly mush and add to a smaller bowl. Squeeze the juice of 1 lime into the bowl with the avocado cubes and mix well. Pour lime avocados into the bowl with the other veggies. The lime will help the avocados from browning. Add whole wheat pasta to boiling water and cook according to the package (8-10 minutes). Once noodles have cooked, drain, rinse and let cool. Once cooled, add pasta and seasonings to the veggies and mix well. Store in the fridge until time to serve.
