BIG potato lover here!! If you love potatoes as well and are in search of a healthier alternative to french fries, you gotta try this recipe out! It’s one of my regulars. I love pairing the wedges with fresh guac.

Ingredients

  • 2 large russet potatoes

  • Large bowl of cold water

  • 2 tablespoons of fresh chili paste

  • 2 teaspoons of cajun creole seasoning (I use Tony Chachere's: Creole Original Seasoning)

  • Salt to taste

  • Pepper to taste

Preparation

Wash and peel potatoes. Cut potatoes into wedges. Place cut potatoes in the large bowl of cold water for 2-3 minutes. Drain well and place back in the bowl. Pat mostly dry with a clean towel. Add fresh chili paste to the wedges and toss until coated well. Place chili paste coated potato wedges into the air fryer basket. Sprinkle with cajun creole seasoning, salt, and pepper. Cook at 400 degrees in the air fryer for 13-15 minutes or until the inside of the potatoes become tender. If baking in the oven, bake at 425 degrees for 30-35 minutes. Make sure to toss or flip half way through (for both oven and air fryer).
