This recipe is inspired by a Pickle recipe I found on the Stasher website. I added a few extra ingredients.

Ingredients

  • 1/2 cup water

  • 1/2 cup vinegar

  • 1 ½ teaspoons of sugar

  • 1 1/2 teaspoons dried dill

  • 1 teaspoon kosher salt

  • 1 English cucumber, sliced

  • 2 cloves of garlic, sliced

  • 1 tablespoon of peppercorn

Preparation

I used a Stasher bag for this recipe. I’m sure it can be done in a jar, but I have not tried the recipe that way.

Set your water temperature to around 140° Fahrenheit.

In a Stasher bag or bowl, combine all ingredients except cucumbers. This mixture will be your brine for the pickles.

Wash and slice your cucumber and add to the Stasher bag or bowl. Make sure to leave at least 1 inch of space at the top.

Remove as much excess air from the bag as possible before sealing.

Heat water on the stovetop to 140° Fahrenheit. Place pickle mixture in the heated water and let the cucumbers pickle for 2.5 hours. This works best if you maintain the same water temperature throughout the pickling process.

Remove and add directly into an ice water bath for quick chilling.

Store in fridge.
