Apple Pie Rolls

These apple pie rolls were inspired by Chef Kim from PlantPure. They are really easy to make and taste like a happy fall day.

Ingredients

Ingredients:



  • 2-3 large apples or 4-6 smaller apples

  • 2 tablespoons of coconut palm sugar

  • 2 tablespoons of agave or pure maple syrup (optional for added sweetness)

  • 1 teaspoon of cinnamon

  • 2 tablespoons of cornstarch

  • 1 tablespoon of lemon juice

  • Vegan egg roll wrappers



Topping:



  • 2 tablespoons of plant milk

  • 1 tablespoon of coconut palm sugar

  • 1 teaspoon of cinnamon

Preparation

Peel apples and dice into tiny ¼” pieces. Add apples to a bowl along with the lemon juice, coconut palm sugar, cinnamon, agave (if using), and cornstarch. Mix until everything is well incorporated. Scoop ½ cup of apple mix into the middle of each egg roll wrapper. Fold the bottom edge up then brush a small amount of water onto the remaining edges. Fold the side corners in then tightly roll up to close the egg roll wrapper. Continue with remaining egg roll wrappers until the apple mix is gone. Brush each roll with plant milk then sprinkle with cinnamon sugar. Bake for 375 for 8 to 10 minutes, flipping midway through.
