Black beans and sweet corn in a spicy-sweet cream sauce. This recipe is ready in less than 30 minutes and will easily become a new family favorite.
Ingredients
2 cups of cooked brown rice
2-3 tablespoons of veggie broth
1 can of sweet corn (drained)
1 ½ tablespoons of agave
1 can of black beans or 2 cups of cooked beans, drained and rinsed
1/2 red pepper, diced
⅓ cup of plant milk
1/4 teaspoon of cayenne pepper, or more to taste
1 teaspoon of Creole Cajun seasoning
1 teaspoon of hot sauce
1 teaspoon of sea salt
Pepper to taste
Preparation
Add veggie broth and corn to a large skillet and saute for about 10 minutes, stirring occasionally, until slightly caramelized. Add agave and saute for about 2 more minutes, stirring constantly. Add black beans and red pepper and saute for about 2 more minutes. Add plant milk, seasoning, and hot sauce, and let simmer until the sauce thickens, about 3-4 minutes. Serve immediately over rice. Feel free to add another splash of hot sauce on top.
