I never really ate ramen growing up but I love experimenting with various veggie recipes nowadays. My fiance requested I make a “chicken ramen” copycat recipe. He gave this one a 5 star rating!

Ingredients

  • 8 cups of vegetable broth

  • 8 oz of ramen noodles

  • 3 tablespoons of soy sauce

  • 2 tablespoons of miso paste

  • 1 tablespoon of Italian seasoning

  • ½ teaspoon of paprika

  • ½ teaspoon of mustard powder

  • ½ teaspoon of celery seeds

  • ½ teaspoon of garlic salt

  • ½ teaspoon of black pepper

  • 1/4 cup of chopped green onions (for garnish)

Preparation

Add vegetable stock, soy sauce, and miso paste to a large pot and bring to a boil. Add all the seasonings to the broth. Let simmer for 20 minutes. Bring back to a boil then add ramen, stir well and remove from heat. Let sit for 3-4 minutes with lid on top (unless noted otherwise on ramen cooking instructions). Top with green onions and enjoy!
