Savory Roasted Veggie Sausage Bowl

This recipe comes from the Minimalist Baker (linked below). It is full of flavor and easy to make.

Ingredients

  • 2 medium Yukon gold potatoes, cut into 1-inch cubes (2 potatoes yield ~3 cups or 500 g)

  • 1 ½ cups cherry tomatoes, whole

  • 1/2 small red onion, sliced (1/2 small red onion yields ~1 cup or 125 g)

  • 1 small green bell pepper, sliced (1 small pepper yields ~1 cup or 88 g)

  • 1 ½ tsp dried Italian herbs (or sub dried basil and oregano)

  • 1/2 tsp garlic powder

  • 1/2 tsp sea salt

  • 1/4-1/2 tsp red pepper flakes (optional)



‘Sausage’ Crumbles



  • 1 (8-oz) package tempeh*, cut into 1-inch cubes (ensure gluten-free as needed)

  • 1 ½ tsp fennel seeds

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp sea salt

  • 1/4-1/2 tsp red pepper flakes (depending on how spicy you like it)

  • 1 Tbsp tamari

  • 2 tsp maple syrup

Preparation

Preheat oven to 425 degrees F and line a baking sheet with parchment paper.



Add potatoes, tomatoes, red onion, and green bell pepper to the baking sheet and drizzle with olive or avocado oil. Add the Italian herbs, garlic powder, salt, and red pepper flakes (optional), and toss well until evenly coated.



Roast for 20-25 minutes until the potatoes are golden brown, the onions are slightly caramelized, and the tomatoes are beginning to burst.



While your veggies roast, make the Sausage Crumbles.

Add the cubed tempeh to a food processor along with the fennel seeds, thyme, smoked paprika, garlic powder, salt, and red pepper flakes and process for ~10-15 seconds until you achieve a chunky crumble. Be careful not to over-process, as it will break down more on the stove!



Heat a large  nonstick skillet over medium-high heat, and once hot, add the tempeh crumbles and spread them out in an even layer. Leave the crumbles undisturbed for 5-6 minutes so they brown on the underside, then stir and cook for another couple of minutes to get evenly toasty.



Finally, turn off the heat, add the tamari and maple syrup, and mix well.



When the veggies and sausage are done, divide between serving bowls and top additional seasonings.
