It’s hard to find authentic vegan Pad Thai at most Thai restaurants because it is traditionally made using fish sauce and shrimp. I wasn’t trying to necessarily make a veganized Pad Thai recipe (just experimenting with Asian noodle dishes) but as soon as I took a bite I thought it definitely had the Pad Thai essence to it. Whatever you want to call it…this noodle tofu dish is delicious!
Ingredients
2 shallots
4 cloves of garlic
1 package of extra firm tofu
Sprinkle of corn starch
Sprinkle of salt, pepper, garlic powder and onion powder
1 small crown of broccoli (Stems included)
1 bell pepper
8 oz thick rice noodles
1 tablespoon of Thai seasoning
½ cup of green onions
Sauce:
⅓ cup of soy sauce
2 teaspoons of chili paste
1 tablespoon of agave or pure maple syrup
1 tablespoon of rice vinegar
Juice of ½ a lime
Toppings:
Green Onions
Peanuts
Red pepper flakes
Preparation
Press and drain tofu. Crumble and add to parchment paper (cut parchment paper to fit the basket of the air fryer ensuring no extra paper is sticking up to avoid a fire hazard, if your air fryer instructions say no parchment paper, bake in the oven instead). Sprinkle tofu with cornstarch, salt, pepper, onion powder, and garlic powder then add to the air fryer at 400 degrees for 10-12 minutes (or bake at 425 degrees for 12-14 minutes). Thinly slice shallots and mince garlic. Add to a skillet with 1 tablespoon of water and sauteed for 2-3 minutes. Wash and cut broccoli (thinly cut broccoli stems) and bell pepper and add to the pan. Cook for 4-5 minutes. Bring a large pot of water to a boil in order to cook the rice noodles. Cook rice noodles according to the package. Once tofu is done cooking in the air fryer (or oven), add to the pan with the broccoli and bell peppers, along with 1 tablespoon of Thai seasoning. Mix well and let all cook together for 3-4 minutes. Mix sauce ingredients in a small bowl. Once noodles are done cooking, add to pan with the veggies and tofu. Add sauce and green onions and toss. Let cook for 1-2 minutes then serve. Top with extra green onions, chopped peanuts and red pepper flakes.
