I originally saw this sandwich recipe from The Vegan Babe (linked below). I love how simple the recipe is and how quickly the sandwich comes together. It’s always nice to have quick lunch options to prepare when short on time.
Ingredients
2 slices of whole grain bread
1 small avocado or ½ a large avocado
100g extra firm tofu crumbled and liquid squeezed out
Squeeze of lemon
1 teaspoon of everything but the bagel seasoning
2 tablespoons of nutritional yeast
Pinch of red pepper flakes
Salt and pepper to taste
Optional:
Pickled red onions
Preparation
Crumble the tofu with your hands and squeeze the liquid out over the sink. Add the crumbled tofu to a small bowl along with the rest of the ingredients and mash with a fork until combined.
Assemble your avo toast masterpiece then pan fry over medium heat until golden on each side.
