Hummus Veggie Wrap

Store bought hummus is an option but homemade hummus tastes 10 times better! This recipe is a quickie that makes a great lunch or snack on the go.

Ingredients

  • 5 whole wheat tortillas

  • 5 cups of spinach

  • 1 ¼ cups of shredded carrots

  • 1 large cucumber

  • 1 large red bell pepper

  • 3-4 roma tomatoes

  • 2 avocados

  • Hot sauce (optional)

  • Sprinkle garlic salt

  • Sprinkle pepper

  • Sprinkle smoked paprika


Hummus Ingredients:


  • 1 can of chickpeas or 2 cups of cooked chickpeas

  • ¼ cup of tahini

  • 3 tablespoons of lemon juice

  • 2 tablespoons of water

  • 1 clove of garlic (minced)

  • ½ teaspoon of sea salt

  • ¼ teaspoon of cumin

  • ¼ teaspoon of smoked paprika

  • Pepper to taste

Preparation

For the hummus, drain and rinse chickpeas in warm water. Add chickpeas, along with the remaining hummus ingredients to a food processor or blender and pulse until you end up with a smooth texture. Cut veggies. Place wheat tortilla on a plate (I usually microwave tortilla in a paper towel for 30 seconds first so it is easier to work with) and start with a layer of hummus. Next, layer on a few cucumber slices, tomato, bell pepper, ¼ cup of shredded carrots, 1 cup of spinach, avocado, hot sauce and seasonings. Wrap like a burrito and enjoy!
