Raw Black Bean Veggie Tacos

If you have the time, give the Salsa Verde recipe referenced above from NutritionStudies.org a try. It’s delicious!! Making the salsa from scratch takes longer than 15 minutes so if you are tight on time, grab your favorite store bought salsa to top these tacos.
Store bought salsa buying tip: try to find a salsa that does not have sugar in the ingredients. There’s really no need to add sugar to salsa. Unfortunately sugar sneaks into a lot of store bought foods.

Ingredients

  • 1 can of black beans (or 2 cups of cooked black beans)

  • 1 can of corn

  • 1 bell pepper

  • 1 small zucchini

  • 2 tablespoons of cilantro

  • 1 small lime

  • 1 teaspoon of cumin

  • ¼ teaspoon of garlic powder

  • ½ teaspoon of salt

  • 15-18 corn tortillas

  • 2 avocados

  • Hot sauce of choice

  • Salsa Verde (click here for recipe) or salsa of choice

Preparation

If making homemade salsa verde, start by following the recipe linked above. Next, drain and rinse black beans and corn and add to a large bowl. Chop bell pepper, zucchini, and cilantro and add to the bowl. Squeeze lime juice and add sea salt, cumin, and garlic powder. Mix well then set aside. Wrap however many tortillas you plan on eating in a paper towel or tea towel and microwave for 30-60 seconds. Scoop out 3-4 tablespoons of bean veggie mixture into each tortilla, top with 1-2 avocado slices, salsa, hot sauce and enjoy!
