Veggie Couscous Jars with Tahini Dressing

These jars are soooo simple to make and also very versatile if you prefer to sub out different veggies or add more. I love stacked meal jars like this because they are extremely convenient to throw in your bag before heading out the door.

Ingredients

Jars:


  • 1 ½ cups of water

  • Pinch of salt

  • 1 ⅓ cups of couscous

  • 1 red bell pepper

  • 1 cucumber

  • ¼ cup of diced red onion

  • 1 can of corn


Tahini Dressing:


  • ¼ cup of tahini

  • 1 tablespoon of lemon juice

  • 1 clove of grated garlic

  • 1 tablespoon of liquid aminos

  • ½ teaspoon of agave

  • 2 tablespoons of water

  • ¼ teaspoon of salt

Preparation

Add water and a pinch of salt to a medium skillet and bring to a boil. While waiting, dice veggies and drain corn. Once boiling, add couscous, stir, place lid on top, and remove from heat. Let sit for 5 minutes. Add all the dressing ingredients to a blender and blend until smooth. Once couscous has fully cooled, add to the bottom of your jars. Next layer in the veggies. Keep the dressing in a separate container until ready to eat.
