Cinnamon Sweet Potatoes

This recipe is so simple it probably doesn’t need to be written down. Sweet potatoes are loaded with vitamin A, potassium, vitamin C and fiber so eat up!

Ingredients

  • 2 large sweet potatoes

  • 2 tablespoons of agave or pure maple syrup (plus a drizzle more)

  • 1 teaspoon of cinnamon

  • Sprinkle of salt

Preparation

Preheat the oven to 425 degrees. Wash and peel sweet potatoes. Cut into 1 inch cubes. Place in a baking dish and toss with agave and cinnamon. Sprinkle with a pinch of sea salt. Bake for 35 to 40 minutes or until the sweet potatoes can easily be pierced with a fork. Remove from the oven and a drizzle of agave or pure maple syrup. Let cool and enjoy.
