My favorite part about this recipe is that you just throw everything into 1 pot and let the simmering do its magic. Great time saver!
Ingredients
1 small yellow onion
1 jalapeno
2 cloves of garlic
2 cups of brown rice
2 ½ cups of vegetable broth
1 can of crushed tomatoes
1 can of corn
2 teaspoons of taco seasoning
½ teaspoon of smoked paprika
1 teaspoon of chili seasoning
1 teaspoon of sea salt
Preparation
Dice onion and jalapeno (remove seeds and stem). Mince garlic. Rinse rice then add all the ingredients to a large pot. Bring to a boil then reduce heat to a simmer and cook for 40 minutes or until liquid is absorbed.
