Roasted Garlic and Herb Radishes

I had a bunch of radishes in my fridge and wasn’t sure what to make so I did a little research and found out that they roast well and taste great after spending some time in the oven. I prepared this recipe using tahini in order to ensure the herbs stick. Definitely a tasty and flavorful way to eat radishes!

Ingredients

  • 1 pound of radishes

  • 2 tablespoons of tahini

  • 2 small cloves of garlic

  • ½ teaspoon of oregano

  • ¼ teaspoon of salt

  • ¼ teaspoon of dried parsley

  • ¼ teaspoon of black pepper

Preparation

Preheat the oven to 425 degrees F. Cut the radishes in half lengthwise and add to a large bowl. Add tahini and minced garlic to a small bowl, mix well then toss radishes with tahini mix. Sprinkle oregano, parsley, and pepper on top and toss to combine. Arrange radishes in one layer in a baking dish then sprinkle with salt. Roast for 20-25 minutes or until tender.
