Slow CookerJackfruit Stew

My grandma used to make an amazing stew every winter. She was an amazing cook! I have no clue what ingredients she used (I was only 10 or so) but this soup is inspired by her.

Ingredients

  • 1 can of jackfruit

  • 1 small yellow onion

  • 1 ½ pounds of yellow potatoes

  • ¾ pound of carrots

  • 4 cups of vegetable broth

  • 14.5 oz can of diced tomatoes

  • 2 cloves of garlic

  • 1 teaspoon of sea salt

  • ½ teaspoon of dried parsley

  • ½ teaspoon of chili powder

  • ¼ teaspoon of red pepper flakes

  • 1 teaspoon of smoked paprika

  • Pepper to taste

Preparation

Drain and rinse jackfruit. Shred with your hands and add to a crockpot. Wash and peel potatoes. Cut into 1 inch cubes and add to the crockpot. Chop carrots and onions and mince garlic and add. Add remaining ingredients. Turn your crockpot to low and cook on low for 4 to 5 hours or until potatoes are tender.
