Taco Soup

Dump everything into a large pot, cook, blend and then you are ready to enjoy!

Ingredients

  • 1 can or 2 cups of cooked black beans (rinsed and drained)

  • 1 can of crushed tomatoes, no salt added

  • 1 can of mild green chilies

  • 1 chopped green bell pepper

  • 1/2 red onion, chopped

  • 1 cup of frozen corn

  • 4 cups of veggie broth

  • 1/4 cup of jalapenos from a jar

  • 1 tablespoon of cumin

  • 1 tablespoon of taco seasoning

  • 1/2 teaspoon of sea salt

  • 1/2 teaspoon of garlic powder

  • 1/2 teaspoon of smoked paprika

Preparation

Add all the ingredients to a large pot and cook for 35 to 40 minutes on medium heat. Let cool a little then add to a food processor or use an immersion blender and pulse a few times (make sure not to blend too much resulting in a paste). Pour back into the large pot and let simmer for 10 more minutes. Top with tortilla strips and guacamole and enjoy!
