Grilled Hawaiian BBQ Tacos

At first I wasn’t sure if I’d like pineapple with BBQ sauce but there’s something about this combo that just feels like summer bliss. The tofu has a meaty texture that pairs well with the veggies and pineapple.

Ingredients

  • 1 block of super firm tofu

  • 2 cups of pineapple cut into 1 inch cubes

  • 1 bell pepper

  • 1 cup of red onion cut into 1 inch pieces

  • 1 cup of BBQ sauce

  • Corn tortillas

  • 2 tablespoons of cilantro

Preparation

Press and drain tofu then cut into 1 inch cubes. Cut bell pepper into 1 inch pieces. Preheat the grill to medium/high heat. Start adding tofu, pepper, pineapple, and onion to skewers rotating between the ingredients. Brush a thick layer of BBQ sauce over the skewers once loaded with ingredients. Add to the grill and let cook for about 5-7 minutes before rotating. You may need a spatula to make sure none of the ingredients stick to the grill. Turn then add another layer of BBQ sauce. Cook for another 5-7 minutes before turning one last time. Cook for another 3-5 minutes or until starting to char then remove from heat. Assemble tacos by warming corn tortillas and adding grilled tofu, pepper, onion and pineapple. Top with cilantro and enjoy.
